A delicious classic and the perfect partner to our Za'atar Pita Chips.
In a food processor, pulse together the chickpeas and garlic until finely chopped. Add the tahini, cumin, salt, cayenne, oil, and lemon juice. Puree until smooth. Add 2 tablespoons of the water and pulse until creamy. If you want it creamier, add the remaining 1 tablespoon water. Taste for salt – you may want to add a little more, especially if you’re using cooked, not canned, chickpeas.
Serve the hummus topped a little more oil and some cilantro and smoked paprika. And with ZaZa pita chips.
