Scoop up this powerful dip loaded with garlic, cucumber and dill. Repeat.

  • 1 cucumber, peeled
  • 2 small cloves garlic, grated
  • 1 scallion, chopped
  • 1¼ cups Greek yogurt
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon fresh lemon juice
  • ½ teaspoon kosher salt
  • ⅛ teaspoon freshly ground black pepper, plus more for serving
  • 3 tablespoons chopped fresh dill or mint, plus more for serving

Cut the cucumber in half lengthwise and scoop out the seeds. Cut the cucumber into ¼-inch pieces and add to a medium bowl. Add the garlic, scallion, yogurt, oil, lemon juice, salt, pepper, and dill and stir well to combine.

Serve topped with a little more pepper and dill. (It’s even better the next day.)
