Roasted Red Pepper Dip

Ingredients

  • 16-ounce jar roasted red bell peppers (drained) or 4 fresh red bell peppers, roasted, peeled, and seeded
  • ½ cup roasted, salted almonds
  • ½ cup grated Parmesan
  • 1 clove garlic
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon sherry vinegar
  • ¾ teaspoon kosher salt, plus more to taste
  • ¼ teaspoon cayenne pepper

Make it

In a blender, combine the bell peppers, almonds, Parmesan, garlic, oil, vinegar, salt, and cayenne. Blend until smooth. Taste for salt – you may want to add a little more.

Serve with our Za’atar and/or Sea Salt pita chips.
