- 1 15.5-ounce can chickpeas (drained and rinsed) or 1½ cups cooked chickpeas
- 1 small clove garlic
- 2 tablespoons tahini, well stirred
- 1 teaspoon ground cumin
- ¼ teaspoon kosher salt, plus more to taste
- ⅛ teaspoon cayenne pepper
- ¼ cup extra virgin olive oil, plus more for serving
- 2 tablespoons fresh lemon juice
- 2 to 3 tablespoons warm water
- Chopped fresh cilantro, for serving
- Smoked paprika, for serving
